Feed Me Some More
Mondays seem to be forming into a gastronomical thang.
Here’s something I conjured up a few days ago when I couldn’t find a recipe that I wanted for savory crepes.
I probably couldn’t find what I was looking for because what I really wanted was a mix of savory and sweet.
I started with the idea of apples and onions, because I heard somewhere that they are a nice culinary pairing. Ok…really it was because I had a couple of apples rolling around the fridge that I was going to be obliged to enrol in preschool if they got any older.
I melted about 1/4 cup of margarine in a pan and sauteed a half cup of sliced red onion on medium-low. I cored the apples (two), sliced as for a pie (in hindsight, I would have peeled the apples as well) and stirred them in with the onions.
When things started softening up a bit, I sprinkled on maybe four tablespoons of brown sugar, a pinch of black pepper (what the hell), and a good dash of cinnamon. The final touch was a healthy sploosh of balsamic vinegar.
I lined the crepes with shredded cheddar cheese and topped them with the apple-onion mixture. There is even a lovely reduced sauce left in the pan perfect for drizzling over the rolled crepes*.
They were very decadent. I think they could be even better. Next time I think I’ll top with a few roasted almonds or pistachios or some such.

*I have an excellent crepe recipe. They are easier to make than you might think, and freeze well. Let me know if you would like it.
